Description

Couscous is toasted until golden and then cooked in water or vegetable stock before being combined with roasted red peppers, tomatoes, spinach, mint, and parsley. Topped with feta cheese and an easy lemon vinaigrette, this salad makes an excellent vegetarian main dish or side for barbecue, kabobs, chicken, or seafood.
